Coconut Chicken Curry

After my crossfit workout this evening, I was famished. I looked in my fridge and pantry and decided to make something that would taste good and fill me up. Here is the recipe. Enjoy!!!

Ingredients:
1/2 Large red onion
4 mushrooms
3 Green chillies
1/2 bag of chopped spinach
2 chicken breasts cooked
1 can of coconut milk
2tbsp of olive oil
Salt for taste
1 tsp - coriander powder
1 tsp - all spice
1/2 tsp - turmeric powder
8 curry leaves
Process
Heat oil in medium
Add onion. Let onions be caramelized
Add green chillies and mushrooms. Stir for about 2 mins
Add spinach. Stir till partly cooked
Add coconut - let it boil for 5 mins
Add spices and curry leaves
Add chicken
Let it simmer in low for 5 mins
Serve with your fav dish. I'm in love with sweet potato pasta.

Healthy Momos

Momos are Indian/Nepalese dumplings. Most of us are familiar with Chinese dumplings, which have a bit of sweetness. The momos that we make are spicy and delicious. Below is a recipe to make momos and rather than using a flour wrapper, ill use spinach leaves to turn it into a healthy option.

Momo filling:
2 lbs ground chicken
1.5 Red Onions
6 to 8 green chillies - small
6 cloves garlic
1/3 box Momo masala(you can use all spice, coriander, and cumin powder if you don't have momo masala)
Salt for taste (2tsp is what I typically use)
1/2 tsp turmeric powder
Optional - chopped cilantro (4 to 6 stems)

Spinach or lettuce leaves for wrapper

Process:
Empty ground chicken in a bowl
In food processor, puree onion, garlic, and green chillies
Mix throughly the purée and ground chicken
Add the spices and keep mixing
Add cilantro and mix



Use spinach or lettuce to place filling and use toothpick for closure. I've placed mine with normal momos.



Steam for 15 minutes

Ready to eat!

Chicken Curry Made Simple

I love chicken curry but after a long day of work, I don't have the time to just stay in the kitchen. Here is a super fast way to make chicken curry:
Ingredients:
2lbs chicken - cut in cubes
1 large red onion - cut in small pieces
2 medium Roma tomatoes - dices
2 green chillies - cut in small pieces
3 tbsp extra virgin olive oil
1tsp - all spice
1tsp - red chilli powder
1 tsp - cumin powder
1/2 tsp - turmeric powder
Sea salt for taste

Heat oil and place onions. Let it caramelize and add tomatoes and green chillies. Stir for 2 mins. Add chicken and spices and keep mixing for 3 mins. Add 1 cup water and let it simmer in med-low heat for 10 mins.

You are now ready to eat!

Eggless Coconut Cake

It is my anniversary today and I wanted to bake a coconut cake to celebrate. Since I'm on a Paleo diet, it is important that I stay away from gluten, dairy, soy, and grains. Typically, It is important to put eggs for moistness but I ran out so I used almond butter. Here are my ingredients:

1 cup Coconut Flour
Pinch of sea salt
Pinch of baking soda
3/4 cup coconut oil
1/2 cup coconut palm sugar
1/2 cup honey
1/3 cup almond butter
1/2 cup shredded coconut
1/4 cup walnuts

Pre-heat oven to 325

Step 1 - mix coconut flour, salt, and baking soda

Step 2 - mix coconut oil, coconut palm sugar, honey, and almond butter

Step 3 - mix all ingredients from step 1 and 2. Once mixed, add shredded coconut and walnuts

Step 4 - place the mixture in a baking pan and cook for 35 minutes.

Saturday Morning - Workout or not to workout

I woke up this morning and I had to make a critical Saturday morning decision - Workout or sleep in.
Working out would jump start my day. Also, at my crossfit gym, they have community day on Saturday, which is free for non-members and get to workout in teams.
On the other hand, sleeping in was very tempting. After a hard week, I deserved to sleep.
I decided that I was going to workout - I'm glad I did. I got a great workout - my team was super supportive. I ran several errands and made an awesome lunch.

Purée the Greens

Lately, I've been hooked on making vegetable purée, especially with greens. I especially love spinach purée. Here is a quick process:
Cut up fresh spinach - one bunch
1 to 2 Garlic cloves
1/2 onion
1 small Roma tomato
Mix ingredients using food processor
Once ingredients have been mixed, place it in a warm pan and add salt, red pepper, and turmeric powder
Let it heat up for approx 7 to 10 mins
Eat it as soup or I mix it with baked chicken
